Hi Leigh-Ann!
Thanks for getting in touch, and good work on taking on China! What helped me while we were travelling in Asian countries with weird food and more deep-frying than I'd ever had, was to try and create some sense of order to my meals. For breakfast, we bought yoghurt and oats and made Bircher's Muesli (chopped up apples, raw oats, lemon and yoghurt left in the fridge overnight to soften) - very stable for blood sugar if the yoghurt isn't too sweet).
For lunch we tried to find bread, but that wasn't always possible, so we ate a simple rice and veg meal. If you're living there, though, do you have access to an oven? If so, I have a simple wholewheat bread recipe that you could make.
And then for supper we tried to eat at a normal hour and something that vaguely resembled dinner food. It might not be particularly adventurous, but I think it's important to ease your body into the shock of a new culture, and try to find an approximation of recognisable food.
Let me know how it goes!

I am a 29 year old type 1 diabetic and I have just moved to China to teach English. I find your blogs so inspiring and they have really helped me to travel without too many diabetic incidents. I am struggling with the food here though. I find myself eating at such awkward times and when I do eat most food is fried in oil. Any tips on what I can eat between meals to stabilise my sugar so that I don't have to rely on eating such unhelathy meals all the time?
